I’m so sorry I haven’t been posting lately! Bad, blogger, bad!

Since moving back to Colorado at the end of June (Yay!), I have been staying with my sister and have had very limited computer access. I promise once I get settled into a place of my own, I will be posting regularly. I have lots of exciting news to share and can’t wait!

I hope everyone is well and enjoying their beautiful summer. Life is good!! MWAH!





Still getting the hang of it…

So I am really struggling to post everyday. Sorry! After sitting at a computer for ~8 hours during the work week, the last thing I find myself wanting to do it get back online. Luckily, I am quitting my desk job. THANK GOD! I can’t tell you how excited I am about this. I absolutely DESPISE sitting all day long! I NEED to move around. My last day will be June 16. Then I can finally focus on my personal training certification since studying has taken a back burner lately. (Again, after sitting ALL DAY the last thing I wanted to do was sit and study!)

Also, although I have only posted one day’s worth of eats, I am already bored by taking pictures of everything I eat. Most days my eats are exciting and I feel like I would be boring you if I showed you every morsel of food that entered my mouth. However, if you are interested in seeing my day-to-day noshing, I would be happy to oblige. Would you like to see my everyday eats? Or are you more interested in things like product reviews and interesting recipes?

No pics for this post since I am still getting the hang of this whole blogging thing but I will strive for consistency this week!

On another note, I ran today! That may not sound too exciting to you but I am just coming back from healing an ankle/foot injury and have missed running terribly! Luckily, I don’t start my “official” marathon training program until July. My cardio workout this morning consisted of:

  • 15 min – 6mph @ 1%
  • 15 min - 4mph @ 5.5%
  • 15 min – 6 mph @ 1%
  • 15 min – 4mph @ 6%
  • cool down

It felt great to run again, even if it was SUPER slow. I immediately iced my foot as soon as I got home. Keep your fingers crossed that the ankle feels ok tomorrow since that will be the green light to run again.

I took both the sit-up and push-up initial tests tonight. I eeked out 16 push-ups and 20 sit-ups. Oh man, full sit-ups are SO much harder than crunches. I am stoked about this challenge!

So here it is….my FIRST food post!

I started my day out with some exercise TV (2 10 minute cardio/strength workouts) to get my blood flowing. And then immediately refueled with a delicious green monster.

Ingredients included: 1 cup almond milk (original unsweetened Almond Breeze), 2 lg kale leaves, 1 small frozen banana, 1 T ground flax seed, lots of cinnamon, a little bit of stevia, and ice. This was my first time using kale. I usually use spinach and I have to say I like it much better. The kale was much more ”plant-y” tasting and subsequently I added stevia and lots of cinnamon to help balance this. But kale is such a nutrtional powerhouse that I felt AWESOME after drinking it!

Since I am working from home today, I was able to make a delish lunch! I started with some celery and mustard. (Love that combo)

Then I had some baked eggplant that I had marinated in balsalmic and Braggs liquid aminos with some lightly steamed cauliflower and snowpeas. Topped the veggies off with some sriracha and aminos.

A little later I got hungry again and snacked on a diced kiwi, 2 brazil nuts, and a small piece of dark chocolate. This chocolate is so good because it has cayenne in it. MMMM! I also had some delicious tea to “fill me up”.

After work, I went to the gym and ran an SLOW 6 miles. It felt so good to run again after taking 10 days off. I had injured my ankle and was unable to run for an eternity over a week. My foot felt pretty good and I was so happy to be running again. After running, I biked for ~45 minutes and then thoroughly stretched.

Dinner was boring. I was starving and didn’t feel like making anything. I didn’t end up eating the Luna bar. I was full after all the veggies and a small serving of granola.

I’m off to catch up on some other blogs. And then head for bed.

Thank god tomorrow is Friday! Anyone have any fun plans for the weekend?

Welcome to my blog! Thanks for visiting!!!!!

 This is my first post so please excuse the lack of pictures. I was ready and prepped to start taking pictures of my lovely vegan eats and then my stupid camera battery died. C’est la vie. I will not let this roadbump in my plan to get the blog up and running derail me….I will post on!

Since I don’t have any food porn to show you, I don’t have much to post about. I guess that makes this a pretty unexciting first post. However, you (and I) have lots to look forward. I am developing a recipe for a vegan Mexican casserole. I am going to perfect it this weekend and will share the recipe!

 

Sorry for the lackluster first post but I am still figuring out how to do this whole “food blog thing”.
